How much fat is needed to be able to absorb nutrients?

I recently read somewhere that vegetables should be eaten with full-fat dressing rather than raw, because you’re body can then absorb the nutrients they provide. I eat yogurt during mealtimes made from 2% milk. If I eat some raw carrots or something on the side, would the fat from the milk be enough for vegetable benefit?
